Malibu Shepherd’s Pie with Onions, Peas & Corn
featuring the Gardenburger® Malibu Burger (#84059-7122)

Servings: 12

Ingredients

  • 12 ea. Gardenburger® Malibu Burgers (#84059-7122)
  • 12 oz. Frozen Green Peas
  • 12 oz. Frozen Whole Kernel Corn
  • 12 oz. Frozen Pearl Onions
  • 2 lb. 4 oz. Fresh Mashed Potatoes (recipe follows)

Directions

  1. Dice the Gardenburger® Malibu Burgers and sauté with peas, onions and corn. Distribute evenly in the bottoms of 12 ring molds.
  2. Prepare mashed potatoes according to recipe. Use pastry bag fitted with star tip, pipe mashed potatoes inside each ring mold, and just over the top.
  3. Bake in 350°F oven for 20 minutes, or until internal temperature reaches 140°F.

Mashed Potatoes

Ingredients

  • 2 lb. 3 oz. Potatoes, fresh, peeled, sliced lengthwise
  • ¾ tsp. Lemon Juice
  • 1 tsp, 2¼-tsp. Whole Milk
  • ¾ tsp. Salt
  • 1/8 tsp. White Pepper
  • 3 tbsp, 1½-tsp. Liquid Margarine

Directions

  1. Place potato halves and lemon juice in pot with enough water to cover potatoes. Boil potatoes until a fork can easily pierce them.
  2. Drain potatoes and place in mixing bowl. Using wire whip, mix at low speed until smooth.
  3. Add margarine, milk, salt and white pepper. Whip at medium speed until fluffy.
